Inverell – Yellow Box White Clover Raw, unfiltered local honey
Bees are an important part of our ecosystem on High Meadow, they provide pollination for our fruit trees and pasture and provide us with honey flavoured by the local trees and flora. The number of our bee hives has grown and they now travel between Inverell, Guyra and Dorrigo providing local flavour and pollen profiles.
Our honey is cold extracted, raw and unfiltered which preserves the delicate aromas, yeasts, pollen and enzymes. Because our honey has not been heat treated it may crystalise, especially in the cooler months. The honey can be restored to its liquid state by placing in a hot water which is less than 45oC.
